Pumpkin Chaffles

Fall is here, but I'm still in denial. I'm not prepared for cooler temperatures, but I am looking forward to my favorite comfort foods. To help get in the fall mood, I like using seasonal spices and flavors. This recipe is great for the season because very satisfying and we're using the ever popular pumpkin flavor.


I'm obsessed with this pumpkin chaffle recipe. Not only is it easy to make, but it's the perfect blend of pumpkiny-cheesy goodness and it takes less than 10 minutes! If you haven't heard of chaffles, they are waffles primarily made of cheese (cheese + waffles = chaffles). A few months ago, I shared my pizza chaffle recipe- click here to get the recipe. It's a tasty low carb recipe that satisfies your cravings. This a versatile recipe that pairs well with you favorite sugar-free syrup, ghee spread, or whipped cream.


Special Equipment

I used my Cuisinart double sided waffle maker; is a total game changer! Not only can you cook 2 waffles at the same time, but it has deep waffle pockets and nonstick grids that release waffles easily. Now that's a win!






Ingredients

  • 4 large eggs

  • 1 cup pumpkin puree

  • 4 teaspoons pumpkin pie spice

  • 4 teaspoons coconut flour

  • 2 teaspoon vanilla extract

  • 2 cup shredded mozzarella cheese

* This recipe was for my full sized waffle maker, if you have a mini waffle maker, reduce the measurements by half.


Instructions

  1. Preheat waffle maker.

  2. Add the eggs, pumpkin puree, pumpkin pie spice, coconut flour, and vanilla extract to a bowl and whisk until well combined.

  3. Stir in the mozzarella cheese.

  4. Spray waffle maker plates with non-stick cooking spray. Spoon 1/4 of the batter into the hot waffle iron and smooth the batter out to the edges of the waffle iron.

  5. Close the iron and cook for approximately 3 minutes.

  6. Remove the chaffle and set aside. Repeat with remaining batter.

  7. Serve hot and top with sugar-free syrup, ghee, or whipped cream.
