By now, some of you know my love/obsession for pizza. It's my favorite food, so I'm also looking for variations I can try. I've had a pizza craving for a few weeks now, so I decided to satisfy the urge. I didn't feel like making a traditional pizza. To be honest, I wasn't in the mood to go through all those steps. So, I opted to make pizza chaffles.
For those who haven't heard of chaffles, they are cheese + waffles. It is such an easy recipe to make. You still get the ooey gooey cheese and a nice crust, but it's shaped like a waffle. It's versatile and you can add your favorite toppings. I chose to add pepperoni slice and I garnished my pizza chaffle with parsley. Get creative and add your favorite toppings!
Special Equipment
I used my Cuisinart double-sided waffle maker. I've had this waffle maker for almost a year and I'm loving it's professional grade quality. I can bake two waffles at a time (amazing!). I also appreciate the deep waffle pockets and the various heat controls, so there's a setting for various preferences.
Ingredients
2 large eggs
2 tbsp. almond flour
1/2 tsp. sea salt
1/2 tsp. baking powder
1 1/2 c. shredded mozzarella, divided
Italian seasoning (optional)
Marinara sauce
Pepperoni slices (or choose your favorite toppings)
Freshly grated Parmesan, for serving
Parley, for garnish (optional)
Instructions
Preheat waffle maker according to manufacturer's directions. Turn on broiler. In a medium bowl, whisk eggs, almond flour, salt, and baking powder together. Add 1 cup mozzarella and stir.Â
Pour 1/2Â cup mixture (depending on the size of your waffle plate) into center of waffle maker and cook until golden and crispy, 2 to 3Â minutes. Repeat with remaining batter.Â
Immediately top with marinara sauce, remaining ½ cup mozzarella, Italian seasoning (optional), and pepperoni slices (or toppings of choice). Place under a broiler for 3 to 5 minutes until the pepperoni is crispy and the cheese is melted.
Sprinkle Parmesan cheese and garnish with parsley (optional).
