Pizza is my favorite food. Since transitioning to a carb-conscious lifestyle, I've had to find pizza variations that are healthy and satisfy my pizza cravings. This recipe is must try because it's easy to make, great for a variety of dietary preferences or restrictions, and it calls for cauliflower!
Cauliflower has a significant source of nutrients. It's naturally high in fiber, which enhances weight loss and digestion. It provides antioxidants that can protect against various illnesses, including cancer. Cauliflower also has choline, which is essential for learning and memory. Besides its many health benefits, cauliflower retains the flavors used in a recipe.
This is a fun recipe to make with others and great to serve at gatherings. Happy savoring!
Ingredients
1 large head Cauliflower
2 tbsp Olive Oil
Sea Salt
Black Pepper
1 3/4 cup Marinara Sauce
2 Mozzarella Cheese
Pepperoni Slice (or toppings of choice)
2 tsp Italian Seasoning
Instructions
Preheat oven to 425 degrees.
In glass casserole dish, pour olive oil on base of casserole dish. Add the cauliflower, sea salt, and black pepper then toss the ingredients. Arrange evenly in a single layer and roast in the oven for approximately 25 minutes, or until golden.
Pour the marinara sauce evenly over the cauliflower. Sprinkle with shredded cheese, then top with Italian seasoning. Place the pepperoni slices (or topping of choice) over the cheese.
Place the casserole back in the oven for about 10 minutes, until the cheese is melted and golden (ooey and gooey!).
