Mixed Berry Cobbler

If there’s one dessert I’ll happily make on repeat all summer long, it’s cobbler. It’s cozy, it’s nostalgic, and best of all...it’s easy. No fancy layers, no complicated steps, no stressing about making it look perfect. You toss some fruit in a baking dish, stir together a simple topping, and somehow it turns into the kind of warm, bubbly dessert that makes everyone want seconds.


For this 4th of July, I’m making a mixed berry cobbler, and it just feels right for the holiday. The berries bake down into that sweet-tart, jammy filling, and the topping turns golden and buttery with crisp edges and a soft center. It’s a classic American dessert that’s perfect for a festive backyard get-together, but honestly, I love it just as much on a random weeknight when I want something homemade without a lot of effort.


The best part is how flexible it is. Use whatever berries look best; blueberries, raspberries, blackberries, strawberries, or a mix of all of them. It’s the kind of recipe that doesn’t ask you to overthink it, and that’s exactly my favorite kind of summer baking.


Ingredients

Berry filling

  • 4 to 6 cups mixed berries (strawberries, blueberries, raspberries, blackberries)

  • 1/4 to 1/2 cup granulated sugar (adjust to taste + berry sweetness)

  • Lemon zest from half a lemon

  • 1 tbsp lemon juice (optional, but brightens the flavor)

  • A few pinches of xanthum gum (helps thicken the juices)

  • 1/2 to 1 tsp cinnamon (optional)

  • Pinch of salt


Topping

  • 4 pre-made biscuits (refrigerated biscuits)


Instructions

  1. Preheat oven to 375°F. Butter an 8x8-inch (or similar) baking dish.

  2. Clean the berries in a water & baking soda mixture. Let it sit for a few minutes. Rince and dry the fruit.

  3. Prep the strawberries by removing the stems and leaves. Quarter the strawberries.

  4. Mix the filling: In a large bowl, gently toss the berries with sugar, lemon juice (if using), xanthum gum (if using), cinnamon (if using), and a pinch of salt.

  5. Pour the berry mixture into the baking dish and bake for 35 minutes, until the berries are hot and bubbling and the juices start to thicken.

  6. Carefully remove the dish from the oven and place the 4 pre-made biscuits on top of the hot fruit (evenly spaced).

  7. Return to the oven and bake 10 minutes more, or until the biscuits are golden brown and baked through.

  8. Let cool for 10–15 minutes to help the filling set up, then scoop and serve warm.


Serving + Storage

Serve this mixed berry cobbler warm (the juicier and bubblier, the better) with vanilla ice cream or whipped cream. Leftovers keep well covered in the fridge for up to 3–4 days; reheat individual portions in the microwave, or warm the whole dish in a 350°F oven until heated through. For longer storage, freeze tightly wrapped portions for up to 2 months, then thaw overnight in the fridge and reheat before serving.
