Grilled Peaches with Honey Cream

It's summer time and the living is easy! I absolutely LOVE summer- from the hot weather, social events, and of course the food. There are so many amazing ingredients to work with and I love taking advantage of that.


It's only right that I whip out my grill this season. You can't let summer pass by without grilling. But to be honest, I just love my indoor grill. I use any excuse to use it. Although I'm using an indoor appliance, you can still try this recipe using a traditional grill. Be sure to use aluminum foil, if you do.


I have to admit that peaches aren't one of my faves. But, I'm a big fan of grilled peaches. The sweetness of the peaches is intensified when you grill them. Adding the cream is the perfect topping because of the honey and cinnamon mixture that layers the flavor of the yogurt. I use granola to add to the texture of peaches and yogurt.


This is a quick, easy recipe that anyone can make and is a fun, tasty way to end a long, hot summer day.




Ingredients
  • 4 peaches

  • 2 tbps honey

  • 4.5 oz plain Greek yogurt

  • 1/4 tbps vanilla extract

  • 1/4 tbps cinnamon

  • handful of granola

  • 3- 5 mint leaves


Instructions
  1. Cut the peaches in half and remove the stones.

  2. Place the peach halves on the grill and grill for 3 minutes on each side until the fruit pulp is softened and hot.

  3. Whisk the yogurt, adding the honey, vanilla extract and cinnamon as you go.

  4. Garnish the hot peaches from the honey cream and granola, dot the walnuts and the mint leaves over the top, and serve.


Tip: You can replace cinnamon with cardamom and replace granola with walnuts. For extra sweetness, add blueberries.
