Coconut & Chocolate Fat Bombs

Coconut fat bombs have been my go-to snacks of the season. I'm LOVING the coconutty-chocolate combination.


For those who aren't familiar with fat bombs, they are small snacks made almost entirely of fat. Low carb ingredients and protein can be added for flavor. The best fat bomb contains healthy fats, natural sweeteners and only a touch of protein.


This is a no bake recipe and takes less than 30 minutes to create. With only a handful of ingredients needed, it's perfect for my kitchen challenged savorers. One batch can make approximately 15- 20 fat bombs. They're portable and great for those on-the-go.







Ingredients

  • 2 cups shredded unsweetened coconut

  • 1/3 cup coconut oil, melted

  • 2 tbsp raw honey

  • 1- 3 tbsp chocti (chocolate spread)

  • 1/2 tsp vanilla bean powder, optional


Instructions

  1. In a blender or food processor, add shredded coconut, coconut oil, raw honey, and vanilla bean powder. Blend until mixture is fine and crumbly.

  2. Line baking sheet with parchment paper or foil. Use tablespoon sized measuring spoon and scoop mixture to form small mounds. Set on lined baking sheet. Place in freezer for 10 minutes.

  3. Melt chocti for 15- 25 seconds until fully melted and smooth. Drizzle melted chocti over coconut fat bombs. Place back into freezer for another 10 minutes. Store in the refrigerator.
