Italian Pork Chops

I LOVE pork chops, especially during the colder months. They're really easy to make (Kitchen Challenged approved) and are great for those who need to be in and out of the kitchen quickly. This particular recipe has a ton of flavor. The Italian seasoning, sea salt, black pepper and herbs play off of each other really well without being overwhelming. You'll also get a hint of garlic, but you can add more depending on your preference.


This recipe is probably one of my favorites because I'm using...Pork Panko! For those who don't know, pork panko is finely ground bread crumbs made from pork rinds. It's gluten-free and carb-free. That's right..ZERO carbs. It's a win-win! It also adds a nice, rich flavor to your recipe. If you're looking for low-carb friendly bread crumbs, pork panko is definitely worth trying; a total GAME CHANGER!





Ingredients

  • 2 Pork chops

  • 1/2 cup Pork panko

  • 3 tbsp Parmesan cheese

  • 1/2 cup Ghee (melted)

  • 2 gloves Garlic

  • 1- 2 tbsp Italian seasoning

  • Sea salt (to taste)

  • Black pepper (to taste)

  • Herbs for garnishing (optional)


Instructions

  1. Preheat oven to 425 degrees.

  2. In one bowl, mix the garlic, sea salt, black pepper, Italian seasoning and most of the ghee. Add the pork chops and marinate in the fridge for at least 30 minutes.

  3. In another bowl, mix remaining ghee, pork panko and Parmesan cheese.

  4. Remove pork chops from fridge and paced on foil-lined baking sheet. Press panko mixture into pork chops.

  5. Bake for 18- 25 minutes, depending on thickness of pork chops.

  6. Garnish with herbs and serve!
