I LOVE a cocktail and happy hour with my friends. But now that we're #stayinghome and practicing physical distancing, I'm playing bartender and hosting virtual happy hours. I'm not the best bartender, so my go-to cocktail recipes tend to be easy and quick.
The Moscow mule has been in heavy rotation for me because it's a simple recipe with easy to follow instructions, and I already have the ingredients at home. Typically, this cocktail is enjoyed during cooler months, but it's grown in popularity and has become a year-round staple. One of my favorite things about this recipe is the gingery, spicy taste from the ginger beer. To make this a low-carb friendly recipe, use diet ginger beer. I found Gosling diet ginger beer works really well-- you still get that gingery flavor without the aftertaste most diet beverages have!

Ingredients
1.5 oz Vodka
0.5 oz Lime Juice
4 oz Diet Ginger Beer
Ice
Wedge of Lime (optional)
Mint (optional)
Instructions
Chill mug and add ice.
Add lime juice and vodka to mug and stir.
Top with ginger beer.
Garnish with wedge of lime and mint (optional).
