Popcorn Shrimp

I love popcorn shrimp. It's such a simple recipe that's full of flavor. It's one of my go-to recipes when I'm hosting friends and family- it's a great appetizer or snack.



Savorers......I have another kitchen gadget! Don't judge- this will probably be the last one for a while. I bought a Cosori air fryer!!! And it's amazing. It's a touch screen appliance that's easy to use (considering I didn't really read the manual). I bought the 3.7 qt, which is a good size to store on the counter. I was a bit skeptical about using the presetting, but I did and the shrimp came out golden and crispy and cut more cooking time in half. The air fryer comes in two sizes- 3.7 qt and 5.8 qt . Corsori offers 3 colors- black, red, and white. I can't wait to try more recipes with this gadget.


Note: If you don't have an air fryer, there are directions below to oven bake the shrimp.

Ingredients

  • 1 1/2 lbs extra-large shrimp (21/25) , peeled and deveined

  • 1 1/2- 2 cups Pork Panko

  • 1 tbsp dried parsley flakes

  • 1/3 cup almond flour

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • 1/2 tsp sea salt

  • 1/4 tsp freshly ground black pepper

  • 1/8 - 1/2 tsp ground cayenne red pepper, to taste

  • 3 large egg whites

  • Minced fresh parsley, for serving (optional)

  • red pepper flakes, for serving (optional)

Instructions for Shrimp

  1. In a shallow dish whisk together pork panko and parsley.  In second a separate shallow dish whisk together almond flour, garlic powder, paprika, salt, black pepper and cayenne pepper. In a third shallow dish whisk egg whites until slightly frothy.

  2. Working with one piece of shrimp at a time, dip each piece in flour mixture then turn to coat opposite side, gently shake off excess. 

  3. Transfer to egg whites, dip and turn to coat both sides, let excess run off. 

  4. Transfer to panko mixture, dip and lightly press to get crumbs to adhere then turn to opposite side and press. Transfer to a large plate. Repeat until all of the shrimp have been coated in mixtures.

Instructions for Air Fryer

  1. Preheat the airfryer.

  2. Add the shrimp (single layer, don't stack shrimp on top of each other) and cook until golden brown on bottom, about 3 minutes. Cook opposite side until golden brown on bottom and shrimp is opaque and cooked through, about 2 - 3 minutes longer. 

  3. Transfer to a platter, repeat process with remaining half of the shrimp. Serve warm sprinkled with parsley and red pepper flakes if desired and serve with sauce.

Instructions for Oven

  1. Preheat oven to 400 degrees.

  2. Add the shrimp (single layer, don't stack shrimp on top of each other) and cook until golden brown on bottom, about 10 minutes. Cook opposite side until golden brown on bottom and shrimp is opaque and cooked through, about 1 - 3 minutes longer. 

  3. Transfer to a platter, repeat process with remaining half of the shrimp. Serve warm sprinkled with parsley and red pepper flakes if desired and serve with sauce.
